Lachs auf ein Backpapier legen, leicht salzen und mit Oliven\u00f6l einreiben. Fischfond aufkochen, Cr\u00e8me fra\u00eeche langsam unterr\u00fchren, nicht mehr kochen, nur warmhalten. Mit Zitronensaft verfeinern und abschmecken. Lachs f\u00fcr 5 Minuten in den Ofen geben. F\u00fcr den Spinat: einen Topf mit Oliven\u00f6l erhitzen und den Spinat, die Zwiebeln und den Knoblauch hinzugeben. W\u00fcrzen und nur kurz garen. Den Spinat in einem Sieb abtropfen lassen. Den Spinat leicht ausdr\u00fccken und in einen tiefen Teller geben. Die Sauce um den Spinat giessen. Optional die Sauce mit dem Kr\u00e4uter\u00f6l verfeinern.
