Saffron has a (very) high content of potassium and manganese and is rich in vitamins C, B6 and folate, and in phosphorus, magnesium, iron and copper. Moreover, it contains omega-3 fatty acids (ALA), fibre, proteins and riboflavin (vitamin B2).
